Salmon in Potato Lake

Pretty simple to do. Prepare my special pototo puree and float a salmon fillet on top.

INGREDIENTS

  • 2 salmon fillets
  • 1 lg or 2 sm potatoes
  • 2 tbsp melted and slightly browned butter
  • 3/4 cup non fat yoqurt
  • 4 tbsp lemon juice.
  • 1/4 cup grated parmesan cheese.

METHOD

→ Peel and cut the potatoes in small pieces, boil until thoroughly cooked.

→ Place cooked potatoes in a blender.

→ Brown the butter in a small saucepan, then add to the blender.

→ Add the yogurt, cheese and lemon juice to the blender.

→ Add a dash of salt and pepper.

→ Blend it thoroughly...you can add a bit of milk to improve the consistency.

→ Remove puree to a small pan and keep warm over a low burner on stove.

→ Sautee or grill your salmon fillets to a temp of 130 degrees (medium rare).

→ Turn your oven broiler on to high.

→ Pour an equal measure of the puree onto your serving dishes (larger soup bowls are ideal) then top with the fillet.

→ Place the dishes under the broiler for 45 - 60 seconds. This serves to "toast" both the puree and salmon.

→ Serve immediately (remember that these plates will be hot, so best to place them each on a second, larger plate to serve.

    CHEFS NOTE:
    You can substitute the parmesan for any other white cheese of your choice
